Slow Cooker Sausage and Potato Casserole

Ingredients

  • 1 - 32 oz. bag of hash browns or may substitute fresh diced potatoes
  • 14 oz. kielbasa cut into small pieces
  • 1 small onion diced
  • 2 1/2 cups shredded cheddar cheese
  • 10.5 oz can cream of chicken or mushroom soup
  • 1 cup milk
  • salt and pepper to taste


Instructions

  1. Combine hash browns, kielbasa, onion, and 2 cups of the cheese in a greased slow cooker.
  2. In a separate bowl, combine cream of chicken, milk, salt and pepper.
  3. Pour over hash brown mix.
  4. Sprinkle remaining cheese over top.
  5. Cook on low for 6 hours or on high for 3-4 hours. It is done when your potatoes and onions have cooked through. Be careful not to overcook the potatoes. Enjoy!

Ingredients For the Sauce: 1/4 cup lemon juice 4 tbsp. butter 1 tbsp. freshly chopped parsley 1 small garlic cloves minced For the Salmon: 3 salmon fillets, about 6 oz. each skin on or off 2 tbsp. avocado oil or olive oil 1 tsp. INGREDIENTS 1 cup dry quinoa 2 cups water (or veggie broth) ½ pound broccoli, cut into florets 1 sweet potato, chopped into ¼ – ½ inch chunks 1 can (15 oz) chickpeas 1 bunch laccinto kale, roughly chopped olive oil, as needed ¼ cup fresh parsley 3 Tablespoons feta cheese juice from one lemon 1/2 Tablespoon apple cider vinegar 2 teaspoons maple syrup 3 Tablespoons olive oil salt and ground pepper, to taste crushed red pepper, to taste (optional) INSTRUCTIONS Preheat oven to 425ºF.
